Book Challenge Update:

TV Update:
I can't break this addiction, I'm sad to say. I succumbed to call of the remote and watched four hours of The Biggest Loser over three days when I should have been reading. It's a great motivator though and I love Jillian Michael's. The show just wasn't the same without her.
Life Update:
This is here to keep me on track and motivated. I tend to get lazy and I like Trader Joe's chocolate way too much. My goal is to get super fit and stay there. I've completed week 2 of the P90X/Insanity hybrid and am not as sore and pathetic as I was during week 1 but I still can't do an unassisted pull-up. Probably never will. This is my third go-around with this program. Crap always happens and I never finish. This time will be different. I also cooked mostly clean food, ate out only once and found a fab new recipe to add to the binder.
Curried Vegetable and Chickpea Stew
Ewww, right? It sounds gross, believe me I know, but my husband requested this and he never requests anything. It turned out amazingly good and was very filling. Even the kids ate it without complaining and we had so much leftover they had to eat it for three days. Three days of no cooking? Now that's an awesome recipe.
Modifications: I added 4 chicken breasts to the bottom of the pot because that man needs meat, I didn't have any peppers, added a full container of chicken broth (didn't have veggie), doubled the curry, used 1 1/2 cups of coconut milk and frozen spinach (added at the end). You will need an enormous crockpot because it gets full. Mine made a little mess of the counter. I think next time I'll use less of the broth, especially if I add a pepper or two. The instructions say to cook for 4 hours on high. Well I had to go to work and because I threw chicken in the pot, I left it brewing for 9 hrs on low. The cauliflower disintegrated but made the "stew" nice and thick and surprisingly it didn't make the texture nasty. The chicken came out perfect. Next time I'll try to take a photo.
